Seattle and Denver Super Bowl Recipes– Roanoke, VA

Planning this year’s Super Bowl party at your apartment in Roanoke, VA? Are you attempting to pay homage to the two cities represented in the game? You could just open a few bags of Doritos and boxes of Hostess snack cakes. But where is the fun in that.

Denver and Seattle will be facing off at the Super Bowl on Sunday, so you could serve some traditional munchies. But if you’d like to be a little more adventurous, here are some recipes that represent both states.

Denver Post Pork Green Chile

  • 1 pound diced pork
  • ¼ cup cooking oil
  • 1 Tbsp. ground cumin
  • 1 ½ Tbsp. dark chile powder
  • 1 ½ Tbsp. dried oregano
  • 1 Tbsp. garlic powder or 2 cloves garlic, crushed
  • 1 medium onion, diced
  • 3 (10 oz.) cans chicken broth
  • 1 (32-oz.) can whole tomatoes
  • 1 Tbsp. tomato paste
  • 3 or 4 fresh roasted green chiles or 1 (8 oz.) can diced green chiles
  • 3 to 5 jalapeño peppers, diced with seeds (remove seeds to bring down the heat factor)
  • Tortillas
  • Shredded cheese

1. Brown pork on all sides in oil over medium high heat. Add cumin, chile powder, oregano, garlic powder, onion and broth.

2. Bring to a boil, reduce heat and simmer, covered, 1 hour. Crush tomatoes with potato masher in another pan. To tomatoes and their juice, add tomato paste, green chiles and jalapeños. Combine tomato and pork mixtures.

3. Bring to a boil, reduce heat and simmer 2 hours (or place in a slow cooker up to 8 hours), until pork is very tender. Serve with warm tortillas and shredded cheese.

Smoked Salmon Dip

If you don’t care for hot pepper sauce, omit that ingredient. Chives are a fine substitution for the green onion. Serve this with your favorite cracker, toast points or pumpernickel cocktail rye bread.

  • 2 (8 oz.) packages cream cheese, softened
  • 12 oz. smoked salmon, chopped
  • 3 dashes Worcestershire sauce
  • 3 drops hot pepper sauce
  • 1 tsp. chopped fresh dill weed
  • 2 Tbsp. chopped green onion

In a medium bowl, stir cream cheese until it is no longer in a hard form. Add salmon, Worcestershire sauce, hot pepper sauce, dill and onion; mix well. Serve.
